For these gluten-free dessert recipes, I’ve used Pillsbury gluten-free flour. It’s a cup-for-cup all-purpose gluten-free rice flour blend that already includes xanthan gum and starches. These components help replace the elasticity and texture of gluten.

It’s essential to check the ingredients of your chosen gluten-free flour blend. If it already contains xanthan gum, there’s no need to add extra. However, adding too much xanthan gum can result in gummy baked goods. So be mindful of the balance!

Tip For Measuring Gluten-Free Flour

When measuring gluten-free flour, use a measuring cup meant for dry ingredients (not a pyrex liquid measuring cup). I recommend the “spoon & level” method. Simply use a large spoon to scoop the flour into the measuring cup, and then level off the top with the back of a knife. Avoid scooping the flour directly from the bag, as it can lead to inaccurate measurements.

Ingredient Substitutions

If you’re looking for dairy-free alternatives, I’ve got you covered! Substitute milk with unsweetened almond milk or unsweetened coconut milk. When it comes to butter, opt for dairy-free or vegan butter, such as Smart Balance buttery spread.
