Discover the Deliciousness of Pork Spider with Sweet and Sour Sauce, Creamy Mushroom, and Pumpkin Purée

Do you believe that you can actually enjoy a dish made from pork spider? This relatively unknown cut of pork (which also exists in beef) is incredibly tender, juicy, and flavorful. Despite its impressive taste, it remains relatively inexpensive and often overlooked. It’s so good that butchers sometimes keep it for themselves!

The irregular shape of this meat makes it perfect for stir-frying in a pan or wok. It cooks quickly to retain its succulence. In fact, this dish is ready in just 10 minutes without the garnish, and with the accompanying vegetables, it takes just half an hour. Who said cooking delicious food requires a lot of time?

Let’s try a new idea: marinate the pork spider with spices, then cook it in a sweet and sour sauce with balsamic vinegar and a touch of honey. Serve it with creamy mushrooms and a pumpkin purée.

The Meat and Marinade

To serve 4 people, you will need:

  • 500g of pork spider
  • 1/2 teaspoon each of cumin, ground coriander, and paprika
  • A pinch of nutmeg
  • 1 tablespoon of olive oil
  • 1 sliced red onion
  • 1 sprig of thyme
  • 2 tablespoons of chopped flat-leaf parsley
  • 5cl of balsamic vinegar
  • 1 tablespoon of honey
  • Salt and freshly ground pepper

Spread the pork spider pieces on a plate and sprinkle them with the spices, salt, and pepper. Let them marinate at room temperature while you prepare the garnish.

The Garnish

For the mushrooms, clean and slice 500g of button mushrooms. Place them in a saucepan with a squeeze of lemon juice, pour in enough cream to cover them, season with salt and pepper, and boil for 5 minutes.

As for the pumpkin, cut it into cubes, remove the seeds and filaments, and leave the skin on – it will become soft and tender after cooking. Boil the pumpkin in salted water until it becomes tender. Drain it and puree it, adding just enough cream to make it smooth. You won’t even notice the skin in the puree.

You can add aromatics like garlic and thyme to the vegetables if you like. However, I prefer to keep them natural since the spiced meat is already flavorful enough.

Cooking the Meat

Heat a tablespoon of oil in a pan over high heat and brown the pork spider on all sides, turning it frequently. If necessary, cook it in batches to ensure it is well-seared. Once it turns golden brown, remove it from the pan.

Next, add the sliced onions to the pan and sauté them for a few seconds. Then, add the balsamic vinegar, thyme, and parsley, and bring it to a boil.

Return the meat to the pan, add the honey, and stir to coat the meat with the seasonings. Cook for a maximum of 5 more minutes. Taste and adjust the seasoning if needed. It’s ready!
